Za'atar Roasted Vegetables

Ingredients

1 sweet potato

1 onion

2 carrots

½ small head of cauliflower

1 can garbanzo beans

olive oil

salt

za‘atar seasoning

tzatziki\ Opt

Directions

1. Heat oven to 400 degrees.
2. Rough chop vegetables.
3. Weigh chopped vegetables. Add 1/2 tsp. salt for each lb veg.
4. Toss with spices and oil.
5. Bake for 15-20 minutes.
6. Serve with tzatziki.
